Lemon Chia Collagen Overnight Oats

I love all things lemon flavored but hate water with a lemon? Weird, right? Anyways, these are delicious, a perfect summer-y overnight oat recipe.

serving size: 1

What you need:

  • 1/2 cup oats
  • 1 tbsp chia seeds
  • 1/2 tablespoon maple syrup
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 3/4 cup unsweetened almond milk
  • Lemon zest
  • Vital protein collagen packet

What you need to do:

  1. Add everything to an airtight container, stir and place in fridge overnight
  2. Enjoy warm or cold the next day

Blueberry Banana Chia Smoothie

This was SO FILLING. I really think I'm gonna be stuffed til lunch guys. Super simple, few calories and no added sugar! Woo, perfect breakfast.


serving size: 2

What you need:
  • 1 frozen banana
  • 1 cup frozen blueberries
  • 2 cups spinach or kale
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1 tablespoon acai powder
  • 1 packet Vital Proteins collagen
  • 2 tablespoons chia seeds
What you need to do:
  1. Blend everything in a high speed blender!
  2. Enjoy

Healthy Green and Yellow Squash Pancakes

So, guys..these are like a healthier version of one of my fav things ever..HASHBROWNS. Comes together with a few simple ingredients and only took me like 20 minutes to make!

Serving size: 10 patties

What you need:

  • 3 small to medium squash, shredded 
  • 2 eggs
  • 1/2 cup of flour
  • 1/2 cup finely diced onion
  • 1 tablespoon Italian seasoning 
  • 1 teaspoon pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon avocado oil 

What you need to do:

  1. Shred your squash and make sure to squeeze out all the extra liquids
  2. Add everything to a medium bowl and mix well 
  3. Form into patty shape 
  4. Saute in tablespoon of oil for 3 minutes then flip and cook 2 more minutes 
  5. DONE!

Iced Matcha Latte

I have officially perfected my Matcha Latte! Sweet, frothy and delicious! And super simple to make. I make it before work and if you know me, that's amazing because I literally wake up 30 minutes before I have to leave for work!

serving size: 1

What you need:

  • 1 cup unsweetened almond milk
  • 1/2 tablespoon sweetener of choice (I go between honey or maple syrup..if using maple syrup use 1 teaspoon)
  • 1 teaspoon matcha powder
  • 1-2 teaspoons coconut butter
  • 1/2 teaspoon cinnamon
  • 3-4 ice cubes
  • you could also add in 1/2 teaspoon of vanilla!
  • ice cubes to serve it over

What you need to do:

  1. Add everything to blender and blend!
  2. Serve over ice

Mini Apple Spiced Muffins with a Crumbly Streusel On Top

Perfect size for a grab and go breakfast or have a couple after dinner for dessert! My batter was a little sticky so I kinda kept adding in coconut milk and I wasn't measuring so do what works best for you! I also used Fuji apples but feel free to experiment with whatever!

serving size: 24 mini muffins

What you need:
Muffins -
  • 2 cups whole wheat flour
  • 1.5 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon cardamom 
  • 1/4 teaspoon salt
  • 1/2 tablespoons melted coconut oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon sticky sweetener of choice (I used a "syrup" made from erythritol I believe from a brand called Good Good)
  • 1/2 cup Greek yogurt
  • about 1 cup coconut milk, separated
  • 3 small apples, diced
What you need:
Streusel - 
  • 1/2 cup of oats
  • 1-2 teaspoons cinnamon
  • melted coconut oil
  • 1-2 teaspoons honey
  • pinch of sea salt
What you need to do:
  1. Preheat oven to 350
  2. Grease a muffin tin
  3. Add all dry ingredients together in a large mixing bowl.
  4. In a smaller bowl, add all liquids together and yogurt and 1/2 cup of the coconut milk and mix well.
  5. Add wet into dry and stir well.
  6. Fold in apple chunks and mix well.
  7. Mix all your streusel ingredients together and top muffins.
  8. Bake in oven for about 15 minutes
  9. Done, yum! 

Gluten Free, Vegan Spiced Carrot Cake Bread

Never in my life have I tried quinoa flour but I got some at work and had to try it out. It actually smelled really good in the bag! You could always use regular flour here, but then it wouldn't be gluten free. This recipe is great for someone with sensitivies because it is also vegan! (woo, no eggs) I might try and make some kind of icing for it.....
serving size: 1 loaf

What you need:
  • 1/2 cup grated carrot
  • 3 small bananas, mashed
  • 2 cups quinoa flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon pumpkin pie (or apple) spice
  • 1/2 cup maple syrup (I used a cinnamon infused one!)
  • 1 tablespoon coconut oil
  • 1/4 cup almond milk
  • 2 teaspoons vanilla extract
  • optional* more shredded carrot for the top, walnuts or pecans, icing!
What you need to do:
  1. Preheat oven to 350
  2. Grease a pan (I used a loaf pan, obv)
  3. Mix all your dry ingredients together, then fold in any additional exras (nuts, coconut chips, etc)
  4. Mix all your wet indredients together, then pour into bowl of dry ingredients
  5. Whisk everything together
  6. Pour your batter into greased pan and top with coconut chips, more grated carrot and whatever else you decide to use
  7. Cook for 40 minutes then check with a toothpick if done
  8. If not, return to oven for an additional 5-10 minutes
  9. Let cool for 15, then enjoy!

Quick Sweet Potato Noodle "Nests" with an Egg Inside

Quick, healthy, filling breakfast idea here, guys. All you need is a couple ingredients for this recipe and you're good to go!

Serving size: probably a lot of nests..I only made one and I'm using the leftover "noodles" in a recipe for this week!

What you need:
  • 1 tablespoon avocado oil
  • 1 teaspoon dehydrated onion (can use fresh, I'm just lazy)
  • 2 teaspoons minced garlic 
  • 1 egg
  • 1 handful sweet potato noodles
  • 1/4 teaspoon black pepper
  • Hemp seeds
  • Optional* paprika, salt, garlic salt, sriracha, crushed red pepper flakes, hemp seeds
What you need to do:
  1. Heat your oil over medium heat on your stovetop
  2. Add in garlic and onions and saute until fragrant, about 1 minute
  3. Add in your sweet potato noodles and cook for about 6 minutes or until tender 
  4. Form a hole in the middle of your noodles and crack an egg inside the hole
  5. Cook for about 2 minutes 
  6. Then, add in a splash of water and cover your egg for an additional 1-2 minutes or until desired doness of egg. (I like mine dippy!)
  7. You're done! Top with any optional toppings and enjoy

Breakfast Yogurt Bowl

Yogurt bowls are my new favorite thing to have for breakfast! They're so easy and you can put whatever you want in them. This bowl has very few grams of added sugar and still manages to be super sweet, plus lots of protein to keep you full.

serving size: 1 bowl

What you need:
  • 1/2 cup of yogurt (I used Stonyfield plain organic) 
  • spoonful of apricot jam (I useed a brand called Good Good Sweet Sweetness or something weird like that..it had no added sugar so I was pumped)
  • spoonful of vegan vanilla chai granola (I used One Degree Organic of course)
  • 3 pieces of fresh pineapple
  • handful of dried mulberries (I used Navita's Organics)
  • sprinkling of flax and chia seeds (Garden of Life Fruit and Flax)
  • topped it was honey (Bee Honey! it's so good)
What you need to do:
  1. Put your yogurt in your bowl and decorate the shit out of it with toppings!

Easy Tropical Fruit Yogurt Bowl

I love yogurt bowls. I wish I could have a different one for breakfast every day. So easy and filling and you can customize them to whatever you love! Today's breakfast bowl was packed with fruits and protein. It was kinda tropical ish so I just went with it. If you halved the yogurt in this and froze the fruit, added a splash of almond milk..this would make a killer smoothie, just sayin'!

serving size: 1 bowl

What you need:
  • 1/2 cup of yogurt (my fav is Siggi's plain, but I used Stonyfield's organic, plain, whole milk)
  • half a banana
  • 1 slice of fresh mango, diced (freeze the rest for a smoothie or put in the fridge for a yummy midday snack)
  • 1 tablespoon of your fav granola (I used One Degree Organic's Veganic Vanilla Chai)
  • 1 teaspoon flaxseed meal (I used Garden of Life's Fruit and Flax)
  • 1 teaspoon unsweetened coconut chips
  • 1 tablespoons nut butter (I used Julie's Real cacao espresso almond butter)
  • drizzle of honey
What you need to do:
  1. Lay down your yogurt, then pile on your toppings and EAT!

Copycat Taco Bell Egg Tacos

This was really good, really easy and kinda messy but so worth it! Great weekend breakfast meal that will keep you full for awhile!

serving size: one taco! with some leftover fillings

What you need:
  • 2 tablespoon olive oil or coconut or avocado
  • cooking spray
  • 2 eggs
  • 1/2 cup of onion, chopped
  • 1 bell pepper, chopped
  • 2 cups spinach or kale, roughly chopped
  • 2.5 teaspoons minced garlic
  • pinch of salt and pepper
  • little bit of your cheese of choice, I went for goat!
What you need to do:
  1. In your first skillet, add oil and cook bell peppers and onion for about 3 minutes or until onions are translucent. transfer to bowl for later
  2. In another skillet add your oil of choice and saute greens for about 3 minutes, until wilted. add your minced garlic. transfer to bowl with peppers.
  3. In a bowl, add your 2 eggs, cheese, salt and pepper and whisk
  4. In anotheeeeeeeeeeer skillet, spray with cooking oil and add your egg mixture. let cook until it's like an omelette, around 5 ish minutes. flip and repeat cooking until it's like a pancake.
  5. Assemble! add any optional fixin's! I put hemp seeds and sriracha

Yogurt Breakfast Bowl

Here's a super quick, easy and filling breakfast to start your morning! Prep the fresh fruits the night before and this is a 5 second breakfast to throw together before work!

serving size: one bowl

What you need:

  • 1/2 cup yogurt (I used Siggi's plain)
  • a handful of fresh fruit (strawbs and blubs)
  • about a 1/4 a cup granola (I used One Degree's Veganic Vanilla Chai)
  • a little bit of dried fruit (I used Navita's Organics dried mulberries)
  • 1/2 tablespoon any nut butter (I used almond)
  • I sprinkled mine with some flax but it's not necessary
  • drizzle of honey! (totally optional cause this is already naturally sweet)
What you need to do:

  1. Lay down your yogurt then assemble! and eaaaat

Breakfast Yogurt Bowl

Here's another super easy, filling, healthy, delicious breakfast. Minimal sugar makes this a real winner if you're a refined sugar hater like myself. I made this when I was sick last week and it was perfect for one of those days. Can also be customized to your favorite yogurt, nut butter and dried fruit/trail mix blend!

Serving size: 1 bowl

What you need:
  • 1/2 cup plain yogurt (I used Siggi's plain)
  • 1 small spoonful nut butter (I used Nutty Novelties no salt added almond butter)
  • 1/4 cup thawed, frozen berries (can use fresh!)
  • sprinkling of Essential Living Food's Enlighten Trail mix which consists of pistachio's, coconut flakes and dried mango (any type of nut/seed/dried fruit trail mix will do)
  • honey drizzle!


What you need to do:
  1. I thawed my frozen berries in my yogurt the night before (thought I was gonna go to work sick as a dog! haha) that's how I got that great color swirl!
  2. Spoon out your yogurt and top with berries, nut butter, trail mix and then drizzle that honey on.
  3. Eat so fast cause it's delicious


Paleo Lemon Donuts

If you like sweets, and you like easy, then this recipe is for you! These took one bowl, minimal cleanup, hardly any time, but they DO NOT disappoint in taste! They're also paleo friendly, gluten free and refined sugar free. 

Serving size: 8 donuts, I added waaay too much batter so probably could make all 12. Not sure how many muffins this could make..12?

What you need:
  • 1 tablespoon oil (I used Nutiva's coconut oil)
  • 1 teaspoon vanilla extract
  • 4 tablespoons maple syrup or honey (I used a mix of both, could sub agave for veg/vegan)
  • 3 eggs (can sub flax eggs for veg/vegan)
  • 1/2 cup milk (I used almond milk)
  • 2 tablespoons fresh lemon juice
  • lemon zest of 1/2 a fresh lemon
  • 1/4 cup cassava flour (I used Otto's) 
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • powdered sugar for sprinkling on top (I recommend Swerve's confectioners "sugar")


What you need to do:
  1. Preheat oven to 350 ℉.
  2. Mix together oil, vanilla, sticky sweetener, eggs, milk, lemon juice, lemon zest until combined.
  3. Add in your cassava and coconut flour and baking soda
  4. Grease up your donut/muffin tin
  5. Fill halfway, as these rise quite a bit!
  6. Bake for 20 minutes
  7. Remove from oven and let sit
  8. Sprinkle with powdered sugar
  9. Enjoy!

PB&J Breakfast Smoothie

For those days when you're craving something sweet and cold for breakfast. Super easy, refined sugar free and packed with lots of fruit and flax. Also, check out my cool Glass Dharma straw!

Serving size: 1

What you'll need:
  • a handful of ice
  • 1 tablespoon any kind of nut butter (I used BestieNut's cashew/almond butter..no added sugar!)
  • 1 cup frozen berries
  • 1/4 to 1/2 cup of Greek yogurt
  • a splash of almond Milk (I used Silk)
  • 1 tablespoon of honey
  • pinch of salt
  • 1/2 tablespoon Garden of Life's organic Flax & Fruit
What you need to do:
  1. Depending on the strength of your blender, add ingredients (liquids first for a weaker blender) then blend and enjoy!
